Everyone needs a treat occasionally. But who needs the guilt that can follow? This chocolate cake is the sin-free solution. It’s only 2.5 net carbs per slice, sugar-free and gluten free. Perfect for low-carb, keto followers.

What’s more, it tastes amazing too. Moist and fudgy, it’s packed with chocolate but not overly sweet. By varying the darkness of the chocolate, you can adjust the sweetness to your own preferences. Unsweetened chocolate is harder to find, but big supermarkets often stock it.

Low-sugar baking has lots of benefits. Besides the effect it has on your waistline, high sugar intake is linked to diabetes, heart disease and cancer. This cake recipe uses a sweetener called erythritol, which is extracted from algae. It tastes almost exactly like sugar but with zero calories and minimal effects on your blood sugar.

METHOD

  • Melt 300g of unsalted butter and 300g chocolate (unsweetened or very dark). Do this in a microwave or glass bowl over boiling water. In a large bowl, beat 6 eggs until frothy then add 150g powdered erythritol. Add the melted chocolate along with 50g ground almonds and stir until just combined.
  • Grease and line a 20cm / 8-inch springform cake tin. Pour in the cake mixture and bake for 30 minutes at 170 degrees until it’s risen and firm to touch.
  • Indulge and enjoy.
