Simple and easy recipes we think you would like to try

Taking inspiration from veggies and a bit of spice, we’ve got 2 perfect recipes that will give you a taste of Asia and Mexico!

1. Simple spicy veg stir fry

What you’ll need:

250g packet of medium egg noodles

1 tbsp tomato puree

2 tbsp soy sauce

2 tbsp sweet chiili sauce

1 tbsp sunflower oil

small piece of fresh ginger, grated

300g stir fry vegetables (carrots, baby corn, peppers, mushrooms, etc)

What you need to do:

Add the noodles to a large pan of boiling water. Cook according to the instructions (normally around 3-4 minutes) and drain well.

Set the noodles aside to cool and then in a small bowl mix the puree, soy and chilli sauce in a small bowl with 150ml water.

Heat the sunflower oil in a wok or a large non-stick frying pan before adding the ginger and vegetables. Stir-fry for 2 minutes. Add the noodles and the sauce and cook for another 2-3 minutes. Serve immediately.

2. Healthy and quick quesadillas

What you’ll need:

1 tbsp sunflower oil

1 onion, chopped

1 clove garlic, crushed

1 red pepper, chopped

2 chilli peppers, finely chopped

3 large tomatoes

8 flour tortillas

150g low-fat cheddar cheese, grated

spring onion to garnish

sour cream, to serve

What you need to do:

In a heavy frying pan, heat the oil and add the onions, garlic and peppers. Fry until soft.

Add the chillis and tomatoes and cook for a few minutes

In a separate pan add the tortilla and put on a medium heat. Sprinkle with some of the cheese. Add a quarter of the tomato and pepper mixture and then top with another tortilla. Cook for two to three minutes until golden brown and then flip the quesadilla and cook for an extra 2 minutes.

Remove from the heat and cut into quarters

Keep the quesadilla warm while frying the remaining three.

Serve with spring onions, sour cream and add a salsa if you’re feeling adventurous!
