Healthy Recipes: Mince Pie Popcorn

Christmas is in the air, which means there are probably a few more treats appearing in the office with each passing day. As with the rest of the year, staying healthy is all about moderation. And this mince pie popcorn lets you strike the perfect balance between delicious Christmas treat and healthy afternoon snack. It's got all those Christmas flavours you love, with the added benefit of being high-fibre and low-calorie.

This recipe uses store-bought mincemeat filling, but you could use your own favourite recipe as well - just go easy on the sugar!

Ingredients (2 servings)

  • 30g un-popped popcorn kernels

  • 60g mince pie meat


  • Pre-heat oven to 100̊c

  • Place un-popped kernels in a microwavable dish, cover with an appropriate lid

  • Microwave on high for between 4 – 6 minutes or until all kernels have popped

  • Remove from microwave and stir through mince pie meat

  • Spread out on a baking tray and bake in the oven for approximately 10 minutes
