Chia seeds, the most super of superfoods, have found themselves in the health limelight recently. They are loaded with nutrients that will benefit your body and brain such as iron, omega-3 fatty acids, protein and micronutrients, as well as being easy to digest.

Chia seeds are also incredibly versatile to use in cooking. Here are two breakfast recipes to try:

CHIA SEED PORRIDGE (serves 1 good portion)

This recipe is gluten-free, refined-sugar free and dairy-free. It’s a doddle to make, tastes delicious and you can add whatever toppings you like.


4 tbsp chia seeds

4 tbsp desiccated coconut

1 banana, mashed

1 cup almond milk (or coconut, oat, rice or cow’s)

1 tsp vanilla essence

½  tsp ground cinnamon

Toppings – cacoa nibs, chopped soaked almonds, blueberries.


Mash the banana in a bowl and add the chia seeds, coconut, vanilla essence, cinnamon and milk. Leave for at least 2 hours or overnight.

Stir, then add the toppings of your choice


It’s hard to believe you can have delicious pancakes without flour, milk or refined sugar. And while these have a different texture to your standard pancake, if you are used to healthier-tasting food, you will love them!

INGREDIENTS (makes 6 pancakes)

 2 large bananas

2 large eggs

1 tbsp chia seeds

3 tbsp coconut oil

½ tsp baking powder

Pinch of salt


Mash most of the banana and mix in with the beaten egg. Stir in the baking powder, salt and chia seeds and leave for a couple of minutes.

Warm the coconut oil in a non-stick frying pan on a medium heat. Pour a circle of batter into the pan.

Cook for about a minute on each side, until golden brown. When the pancakes are all serve them warm with the rest of the bananas, sliced, plus some maple syrup or agave nectar.

These would make a great start to the day. Follow it with a workout at the gym, and you’ll feel amazingly healthy!
