Now the stodgy comfort food of winter is a distant memory, it’s time to take advantage of the benefit that seasonal summer foods can offer.

From fresh and delicious salads, to healthy fruit-based desserts and breakfasts, the food you eat now can be creative, delicious and healthy. Here are some summer produce ideas to make which will give you a nutritious kick, as well as tasting just like summer.


Fig and Parma ham salad

Sweetness from juicy figs complements beautifully the saltiness of good quality Parma ham or prosciutto and tastes delicious. Cut four figs into quarters, and take four slices of Parma ham. Tear one ball of buffalo mozzarella cheese into pieces and then layer the fruit, ham and cheese over a bed of rocket or other mixed salad leaves of your choice. Finally, drizzle with lemon juice, olive oil and season well. For an added sweet kick, try sprinkling pomegranate seeds over the top – one of the superfoods, fit for a super salad.


Papaya and red onion salad

This one is a great accompaniment to any barbecue, and is so simple to make. Slice a papaya into chunks and then dice a red onion really finely, along with half or a whole (depending how hot you like it) chilli. Take a handful of coriander leaves and chop roughly. Stir all the ingredients together and then add the juice of half a lime, a teaspoon of balsamic vinegar and sugar to taste. Fresh and exotic, this one will have your friends coming back for more!


Raspberry and rose cream

With raspberries abundant, this pud is a fresh way to use up the glut of berries you may have. You can use other berries as an alternative. To make eight desserts, you’ll need about 1lb of fruit. Halve the amount fruit, and with one half, add a tablespoon of rosewater (although you can add more depending on your taste) and two tablespoons of caster sugar. Mash up the raspberries and let the juice start to dissolve the sugar. Whizz up 200ml of double cream, and mix the fruit and cream together. You then need to put the other half of raspberries into the bottom of eight dessert glasses, and then heap generously the macerated raspberry and cream mix on top. Delicious! Serve with a glass of chilled champagne....


Peach, nectarine and raspberry granola

For a perfectly fresh and healthy start to your day, try these fruits together in a granola mix (you can make this yourself from oats, coconut, and anything you fancy really). Add some natural yoghurt and a spoonful of honey on top to add sweetness. Delicious!
