Easy, warming chicken soup for the soul

Soup is nourishing, warming, and let’s face it, good for the soul.

Packed with your favourite ingredients, healthy and filling, there are days when nothing but a steaming bowl of broth will do.

From chowders to borscht, ramen soup to vichyssoise, there’s a soup recipe for everybody, and the heartiest of the lot? Well when you’re feeling cold and in need of some hot, goodness packed soup, it’s got to be chicken.

You will need:

1tbsp olive oil

2 medium onions, diced

2 large carrots, chopped

Sprig of thyme

1.5 litres good chicken stock

300g leftover roast chicken without skin and shredded

1 clove of garlic

Pepper and salt to taste

Method:

  • In a large, heavy-based pan heat the oil. Add the carrots, the thyme and the onion. Fry for around 15 minutes, or until the onions are translucent and soft. Stir in the chicken stock and bring to the boil. Reduce the heat and simmer for 10 minutes.
  • Add the chicken and take out the sprig of thyme. Puree with a hand-held blender. Simmer for a further five minutes and then add the garlic, pepper and salt.
  • Enjoy with crusty bread

Add peas, pasta, or noodles if you want to create a heartier, more textured soup, and you can also add yoghurt and lemon for a zingier flavour!
