Three tasty and quick avocado breakfast ideas

Halve. Scoop. Slice. Mash. Avocadoes are one of the speediest breakfast choices. And they’re also delicious, incredibly nutritious and super satisfying. Which means more time to Hussle a workout. And more energy for doing it!

Here are three quick ways to start the day avocado-style.

SCRAMBLED EGG AND AVOCADO

Upgrade scrambled eggs with a hefty dose of avocado. and you’re good to go. Ok, chunks of avocado in scrambled eggs looks slightly odd. But ignore it. The soft eggs gently coat the creamy avocado pieces making one utterly delicious – and quick – bowl of creamy goodness.

METHOD: Dice one avocado and set aside. Whisk 2 large eggs in a bowl and season with pepper. Melt 1 tsp butter in a pan over a low heat. Pour the eggs into the pan and stir gently until the eggs are barely set. Gently stir in the diced avocado, until just warmed through. Pile onto toast and eat immediately!

MASHED AVOCADO ON TOAST WITH GARLIC, OLIVE OIL, SALT AND PEPPER

Your morning toast just got tastier. Generous helpings of garlic, salt and pepper will wake up your tastebuds and kickstart your body into action. It’s a doddle to make for breakfast, lunch and snacks.

METHOD: Place one peeled and chopped avocado in a bowl. Mix in one finely chopped garlic clove. Add a good drizzle of extra virgin olive oil, plenty of freshly ground pepper and a pinch of sea salt. The result? Garlicky, creamy goodness on toast!

QUICK THREE-INGREDIENT AVOCADO SMOOTHIE

Mashed avocado is creamy, fresh and so satisfying. Perfect for a smoothie.  Frozen banana slices cool the smoothie and add sweetness. And it only takes 5 minutes to make. Just make sure you use very ripe avocadoes.

METHOD: Combine 1 ripe, cubed avocado, 2 frozen sliced bananas and 400 mls milk in a blender (sub almond milk for a vegan option). Blend until smooth. Consume immediately.
