WHAT’S THE BEST FOOD TO WARM US UP THIS WINTER? OUR ANCESTORS WOULD HAVE CHOSEN HEARTY VEGETABLES SUCH AS PARSNIPS, TURNIPS, SQUASHES, ONIONS, SWEETCORN, CELERIAC, BEETROOT AND GINGER TO HELP COMBAT THE COLD.
Far from being boring, winter vegetables are an excellent base for getting creative with warming spices, as well as being full of slow-release carbohydates to sustain our physical activity.
So we’ve fused together the flavours of the orient with British veg to bring you an international superstar of a fritter dish!
These tasty fritters make a great side-dish for a meal, or a light snack. Make extra and put them in lunchboxes for school or work. They’re also a great way to make veg appealing to kids.
You can interchange the vegetables according to what you like. Just stick to the correct weight. We like using beetroot to add some warming colour.
200g grated vegetables,
1 onion, finely chopped,
handful fresh coriander,
thumb-sized piece of ginger.
3 tbsp Thai red curry paste,
150g plain flour/rice flour,
1 tsp baking powder,
coconut oil for frying,
Sweet thai chilli sauce, to serve.
Love these simple recipes. I actually have all the ingredients for these. so will make them on the weekend for lunch.
These sound lovely, and I would never have thought of using root veg for fritters, nor with the spice. Definitely going to try these.
