5 DELICIOUS WAYS WITH LOW FAT PROTEIN PACKED COTTAGE CHEESE

Not just for bodybuilders, cottage cheese is a healthy choice for anyone. With more protein than Greek yoghurt, low in calories and carbs, this unassuming creamy cheese is the ideal food to stock up on for summer eating.

Just one cup of cottage cheese contains a whopping 25g of protein – the same as in 3oz of chicken.  It’s also slow to digest which means it provides a steady release of amino acids to repair muscle fibres.

These quick recipes will have you enjoying cottage cheese so much you’ll completely forget how healthy it is!

COTTAGE CHEESE FRUITY BREAKFAST BOWL

Mix together in a bowl one cup of cottage cheese, ½ cup pineapple chunks, ½ cup of chopped mango. Top with ¼ cup of chopped walnuts or pecans and a squeeze of lime juice. Enjoy and embrace the day!

COTTAGE CHEESE PANCAKES

In a large bowl, mix together 1 cup of cottage cheese, 1/3 cup plain wholewheat flour, ½ tsp baking powder, 1 tsp vanilla essence, ¼ tsp cinnamon, 2 tablespoons oil and 3 eggs. Heat a frying pan with a little oil and pour on heaped tablespoonfuls of batter. Cook until bubbles appear, flip and cook the other side until lightly browned.

SMASHED AVOCADO AND COTTAGE CHEESE TOAST

Toast 4 slices wholemeal bread. Scoop out the avocado flesh, place in a bowl and mash roughly with a fork, adding a squeeze of lemon juice. Add 1 cup of cottage cheese and fold in. Season with salt and pepper, then spoon the mixture onto the toast. Add a drizzle of olive oil, some chilli and sea salt. Place under the grill for a short time to warm up. Eat and enjoy!

COTTAGE CHEESE BERRY SMOOTHIE

Packed with protein, this smoothie is thick, creamy and perfect post-workout fodder. Simply put all the ingredients into a blender and blitz: 1 cup cottage cheese, ½ cup milk, 1 banana, 1 cup frozen berries, pinch of cinnamon.

COTTAGE CHEESE NUTTY CELERY FINGERS

It sounds like an odd combination but this is actually quite tasty. Mix together 1 tablespoon nut butter with half a cup of cottage cheese and a pinch of cocoa powder. Stuff celery sticks and munch!
